How to Make a Hydraulic Cider Press on a Budget

Presses come in various materials and sizes. While a simple basket press may suffice for hobbyists, larger operations might require bladder presses or belt fruit presses for greater productivity.

The Frame

Cider presses are essential equipment for anyone wanting to craft their own fresh cider from apples they grow themselves, yet professional hydraulic presses can be costly. Here is an easier and less-expensive way of building one on a budget using items already found around your house, garden or shed.

A traditional basket-style apple press consists of a wooden or steel frame with crossbars and screws connected by threaded rods, featuring an under-basket screw for pressure incrementally increasing over time. Squeezing crushed apples (pomace) in the basket, released their juice which runs down into its container beneath. A good basket-style apple press can produce up to two gallons in one cycle - typically though, one gallon should suffice for most people.

Human effort can be required for operating this style of press. Hydraulic presses, however, are far more efficient for pressing large amounts of fruit; hence the reason most large commercial producers utilize such equipment and it should also be considered essential equipment in any small or medium-sized home breweries.

The Basket

Building a homemade cider press can be an exciting project for home brewers to take on. Cider presses can be quite costly to buy outright, so making one yourself can be an cost-effective solution to producing large volumes of juice. There are numerous types of apple presses available to home brewers - some designed specifically for commercial production while others more suitable for home use.

As with any press, the first step in building one involves building its frame. A strong framework is essential as pressing juice from crushed apples requires considerable force; its structure should withstand at least the weight of an extended car jack when fully extended; also tall enough so that bucket and baking tray with perforations overhang on one side.

Once the frame is complete, it is time to craft your basket from plywood or food grade plastic cutting board. Cut a 22-inch long piece before creating two tubes the same size as your bucket and a piece of PVC pipe to use as handles. Ideally a woodworking lathe would work better but hand saws will do just as well in crafting your basket.

If you don't have access to a lathe, creating your basket can still be done by gluing together strips of wood and shaping it into a cylindrical form that fits over your bucket's lid. To ensure an ideally round basket shape, measure its inside diameter before cutting the circle out.

Metal working skills allow you to construct a stronger and more durable version of this press. A metal press can accommodate larger volumes of apple mash and be used on a much wider scale, but is much harder for beginners to construct than its wooden counterpart. An electric cider press may be more costly but can save both time and effort when pressing apples.

The Squeezer Board

To build a simple, yet sturdy and reliable cider press, all that's needed are some old wood and a hydraulic bottle jack. Both items can be purchased easily at most hardware stores or online for under $100; when searching for the latter it's important to find one with long handles as shorter models don't allow sufficient pressure application.

Your choice of wood should be dense yet not too soft - red oak works great, though other species might also work depending on availability. Naturally, any species must withstand the force generated by a bottle jack which can be quite powerful.

After you've constructed your frame and assembled the trough and drain, the next step should be creating the squeezer board. Although this piece of woodwork may appear straightforward, taking the time to do it correctly will pay dividends later. Lay out 14 long slats of wood side by side, spacing each 1/16' apart with ends aligned with the bottom of your frame is essential to creating an accurate squeezer board.

Your supplies should include a square of cloth that should be at least slightly coarse (I used an old green bed sheet); net curtain fabric from a haberdashers' works perfectly well too, while several screws of any material (even metal screws from hardware stores will do) will complete this project.

A piece of wood protects the pressing board from coming into direct contact with the screw, while the bucket that contains ground apples sits atop. A barrel, drain and tray all fit comfortably under this long piece of wood that extends past the edges of the trough and slide under its screw.

The Screw

Once your apples have been ground into a mash and squeezed to extract juice, the next step should be pressing it. There are various methods for doing this ranging from home-built grinders made out of garbage disposals up to large rack and cloth presses with hydraulic arms providing pressure.

One of the easiest and least costly solutions is a screw or barrel press. These presses are typically designed for winemaking, but can also be used to press apples into cider. To create one yourself, begin by finding or building a frame large enough to hold your bucket or basket, adding some vinegar as sealant for sealing purposes and resistance, then placing 14 long wooden slats spaced 1/16' apart into it with screws or nails fastened along their length; making sure they cover slightly wider than your basket; lastly create a piece of plywood or linoleum for baseplate assembly!

A barrel or screw press is typically powered by a hydraulic jack, a type of car jack with handles designed to create high levels of pressure through pumping action. This option makes for an easy solution in small operations as it doesn't require as much physical labor to operate.

If you don't own a hydraulic jack, creating your own is simple with the right tools and pieces of lumber. Hard, dense wood such as maple or oak is recommended; soft woods like pine may crack under pressure and ruin the final result.

Belt fruit presses offer another solution for larger operations, and use similar principles as the rack and cloth approach; however, with their conveyor belt they allow apples to pass more smoothly through. While more costly, belt fruit presses make producing large volumes of juice more efficiently than manual methods.
